How to Make Authentic Pav Bhaji at Home (Step-by-Step)
Pav Bhaji Recipe is a traditional street dish from Mumbai that is served with soft, toasted pav (buns) and a spicy, buttery vegetable mash. This hearty dish is full of flavor and may be served for lunch, dinner, or even as a party snack. Authentic street-style taste is delivered straight to your kitchen with this Pav Bhaji dish, which is made using common vegetables, fragrant spices, and a liberal amount of butter!
Ingredients
For the Bhaji (vegetable curry):

2 tbsp butter (plus extra for toasting pav)

1 tbsp oil

1 tsp cumin seeds

1 medium onion, finely chopped

1 tbsp ginger-garlic paste

2 medium tomatoes, finely chopped

1 green capsicum, finely chopped

2 medium potatoes, boiled & mashed

1/2 cup green peas (boiled)

1 small carrot, boiled & mashed (optional)

Salt to taste

1 tsp red chili powder (adjust to taste)

1/2 tsp turmeric powder
-
1 tsp pav bhaji masala
-
1/2 tsp garam masala
-
Water (as needed for consistency)

Fresh coriander leaves (for garnish)

Lemon wedges (to serve)
For the Pav (bread rolls):

4–6 pav buns
-
Butter for toasting

A pinch of pav bhaji masala (optional, for sprinkling)
Step-by-Step Instructions
Step 1: Prepare the Bhaji Base

Heat butter and oil in a large pan.

Add cumin seeds. Once they splutter, add chopped onions. Sauté till golden.

Add ginger-garlic paste and cook for 1–2 minutes until raw smell goes away.

Add the chopped tomatoes and simmer until they are mushy and tender.
Step 2: Add Vegetables

Add capsicum and cook for 2–3 minutes.

Now add mashed potatoes, peas, and carrot. Mix well.

Add turmeric, red chili powder, pav bhaji masala, and salt. Mix thoroughly.
Step 3: Mash & Simmer

Add about 1/2 cup water and start mashing everything with a potato masher.

Keep mashing and simmering on low heat for 8–10 minutes, adding water as needed to reach your preferred consistency.

Finish with garam masala and a small knob of butter. Mix well.
Step 4: Toast the Pav

Heat a tawa (flat griddle), add butter, and lightly toast the pav buns.

For added taste, you can optionally sprinkle some pav bhaji masala over the butter.
Serving Suggestions
Alongside the steaming bhaji, serve toasted pav, chopped onions, coriander, and a lemon wedge. Top the bhaji with a dab of butter for a real street-style look!
